
Creole Tomato & Jasmine Rice Pilaf

INGREDIENTS:
• 1½ CUPS ORGANIC JASMINE RICE
• 1 TBSP OLIVE OIL
• 1 TBSP UNSALTED BUTTER
• 1 SMALL YELLOW ONION, FINELY CHOPPED
• 2 CLOVES GARLIC, MINCED
• 1½ CUPS CREOLE TOMATOES, CHOPPED (OR RIPE SUMMER TOMATOES)
• 2½ CUPS CHICKEN STOCK
• 1 TSP DRIED THYME
• ½ TSP WHITE PEPPER
• ½ TSP SALT
• ¼ CUP CHOPPED PARSLEY
• 2 GREEN ONIONS, CHOPPED
INSTRUCTIONS:
1. SAUTÉ AROMATICS:
HEAT OLIVE OIL AND BUTTER IN A LARGE SAUCEPAN. ADD ONIONS AND COOK UNTIL SOFT, ABOUT 3-4 MINUTES. STIR IN GARLIC AND COOK 30 SECONDS MORE.
2. TOAST RICE:
STIR IN JASMINE RICE, LETTING IT TOAST LIGHTLY FOR 1-2 MINUTES.
3. ADD TOMATOES & LIQUID:
ADD CHOPPED TOMATOES, THYME, WHITE PEPPER, SALT, AND CHICKEN STOCK. BRING TO A BOIL.
4. SIMMER:
REDUCE HEAT TO LOW, COVER, AND COOK FOR 15 MINUTES. REMOVE FROM HEAT, KEEP COVERED 5-10 MINUTES.
5. FINISH:
FLUFF WITH FORK, STIR IN PARSLEY AND GREEN ONIONS. SERVE AS A SIDE OR UNDER GRILLED SEAFOOD OR CHICKEN.
