
Bayou Jasmine Coconut Rice

INGREDIENTS:
• 1½ CUPS ORGANIC JASMINE RICE
• 1 CUP COCONUT MILK (FULL FAT)
• 1¼ CUPS WATER
• ½ TSP SALT
• ZEST OF 1 LIME
• 1 TBSP LOUISIANA CANE SYRUP (OR DARK HONEY OR MOLASSES AS SUBSTITUTE)
• 1 TBSP BUTTER (OPTIONAL)
INSTRUCTIONS:
1. RINSE RICE:
RINSE JASMINE RICE THOROUGHLY UNDER COOL WATER.
2. COOK RICE:
IN SAUCEPAN, COMBINE RICE, COCONUT MILK, WATER, AND SALT. BRING TO BOIL, REDUCE HEAT TO LOW, COVER, AND COOK 15 MINUTES.
3. REST:
REMOVE FROM HEAT, KEEP COVERED 5-10 MINUTES.
4. FINISH:
FLUFF RICE WITH FORK. STIR IN LIME ZEST, DRIZZLE WITH CANE SYRUP, AND FOLD IN BUTTER IF USING.
5. SERVE:
PAIRS BEAUTIFULLY WITH BLACKENED CHICKEN, SPICY GRILLED SHRIMP, OR FRIED PLANTAINS.
